Avocado Pea Smash Toast

Ahhhhhhh.......April ☔️

April and spring cleaning go together like peas in a pod. It's no wonder, peas are Mother Nature's way to assist in spring cleaning of the digestive system. They are so loaded in fiber, they help sweep away the dust and grime that had accumulated over the frigid months. It's also a shot of long-awaited green chlorophyll to help us get out of the monochromatic days of winter.

Peas have some history, did you know they have been around for at least 5000 years?

Presently, peas are seeing a new form of regard. They are noted for their fiber rich, protein little selves. Who knew! The market is now carrying powdered pea protein, and it's joining the alternative milk groups as pea milk.

I'm a fan of using the whole food, as is, unadulterated. That's why I want to feature a springy avocado pea smash and add some ideas of how to incorporate these little but mighty peas.

Peas go great with their seasonal partner green onions, making this smash taste even more like spring!

Avocado Pea Smash recipe:

First, in a *bowl add:

• 1/2 cup peas (fresh or frozen) wake up the peas with a shot of hot water until a vibrant green emerges, then drain.

• Spring onion finely chopped, only the parts you like, green, white or both to taste,

(chives also work nicely as an option)

• Juiced 1 lemon or lime and add a little zest to pop out the lemon

• Garlic 1 clove, quartered

• Olive oil just a touch

• Sea salt in a pinch

With a fork or wooden pestle smash away until you have a consistency you like then add:

Secondly, add to the bowl:

• 1 avocado cubed for the final smash

Sprinkle cracked pepper and red pepper flakes, if you like.

*Preferably a Japanese bowl works best, called a suribachi pottery bowl that has a rough pattern of grooves in an unglazed interior. This bowl comes with a wooden pestle that assist in breaking and grinding food down - it works so well, try it!

This recipe is so versatile, it goes great with not only toast, crackers or chips, but on top of lentil and rice, or quinoa pasta. I found, over the winter, a big dollop of avocado pea smash can be amazing on top of vegan mac and cheese, also bumping up the fiber and nutrition.

Trader Joe's has wonderful fresh springy English peas in the refrigerated section, that are sublime. In the not so warm months, my freezer always has a bag of frozen organic peas just waiting on the sidelines.

Bonus tips!

Throw a handful of peas into pestos, stews, soups, salads, smoothies or anything else you can think of to add punches of springy color, protein and fiber. They are such an easy addition to foods, we just need to remember these little green spheres of wonder.
